Rooibos Chai

Caffeine and dairy free, fragrant chai.

Yields

4 cups

Ingredients

  • 3 cups filtered water
  • 1 cup almond milk (ideally unsweetened)
  • 1/4 cup loose rooibos tea (or 4 teabags)
  • 3 each cardamon pods, cloves, star anise or 1 t fennel seeds
  • 1 t fresh ginger (finely chopped or grated) or 1 T ground ginger
  • 1 t licorice root (it will make it sweet, omit of you don't like the licorice taste)


Optional: 3 peppercorns (if you want it a bit spicy, I don't add because of children)

Directions

  1. Using a mortal and pestle, lightly crush all spice (you can omit and leave them whole if you don't have the nerves today)
  2. In a sauce pan bring water to boil, add spices, reduce heat and simmer uncovered for 4 minutes.
  3. Add almond milk and rooibos tea and bring back to boil.
  4. Remove from the heat, cover and steep for another 5 minutes.
  5. Strain and serve hot in winter or over ice in summer. Enjoy.
