Gluten-Free Yogurt Cake

Prep Notes

A GF treat ideal if you have lot's of ripe fruit or fruit that is too sour as is. Not for the sugar-sensitive.

Liquid dough:

  • 1 c plain yogurt
  • 1 egg
  • 120 g GF flour (I used an equal combi of buckwheat and rice)
  • 4 heaping tablespoons of a sweetener of your choice (sugar, honey, maple, brown rice syrup, apple sauce... I used cane sugar)
  • 2 t baking powder
  • 1/2 t salt
  • 1/2 t vanilla powder
  • 2 c of fruit (slightly sour is good, I used very sour plum family)
  • 40 g butter
  • 3 T GF flour mix (as above)
  • 3 T sugar (I used cane)
  • 3 T oatmeal
  • 1/2 t cinnamon

  1. Mix all ingredients for dough (kids job:). Pour to a buttered baking pan.
  2. Place fruit on top evenly (kids job:)
  3. Crumble the topping with your hands and spread on top evenly (kids job:)
  4. Bake at 180 degrees until it smells nice (about 30 minutes).
  5. Enjoy.
