BarBar Oatmeal with Blueberries (and Chocolate)

Prep Notes

Ideally soak the oatmeal in water and salt overnight.

Cooking Time

3 minutes

  • 1 cup rolled oats
  • 2 cups filtered water
  • 3/4 tsp salt
  • 1 cup frozen or fresh blueberries
  • 1/2 T dark chocolate chips or piece of over-70%-cocoa chocolate per serving (or to taste)
  • optionally a handful of raisins
  • 3 tbsp raw coconut oil

  1. Add oats, water and salt to a pot (ideally soaked since previous evening). Also raisins if using.
  2. In the morning bring to boil and simmer on low heat until water absorbed (couple of minutes only), stirring occasionally.
  3. After switching off add coconut oil to the whole pot.
  4. Divide into servings, add chocolate in the middle pushing it in slightly to allow melting.
  5. Add washed blueberries on top.
  6. Serve hot for breakfast, or store in a refrigerator for later ready-to-go snack.

*Do not skip the oil, it will help slow down the absorption of carbs and make you feel more full!
