Almond Flour Banana Berry Muffins

Gluten and dairy free.

Yields

6 big muffins

Ingredients

2 cups almond flour or almond meal

3 eggs

3 ripe bananas

200-300g of fresh or frozen berries

2 tbsp coconut oil (or butter, ghee, yogurt...)

1/4 tsp salt

Directions

  1. Preheat the oven to 180°C (350°F).
  2. In a food processor blend eggs, bananas, coconut oil and salt. 
  3. Add the almond flour and blend well.
  4. Wash berries and stir them in. 
  5. Spoon the dough into 6 paper muffin cups (or more if you like them smaller).
  6. Bake about 30 minutes or until a toothpick comes out clean, they are a bit brown on top and smell nice.
  7. Enjoy warm or cooled.
