Juice Pulp Cookies

Prep Notes

I never throw my juice pulp. Amen.


2 cups of juice pulp (about)

2 cups of nuts (I used previously soaked and dried mix of walnuts, almonds, Brazil nuts, and some unsweetened shredded coconut)

3 dried dates (or equivalent of your preferred sweetener, perhaps honey, maple syrup...)

1-2 tbsp coconut oil


Place the nuts in a food processor and grind to your likeness. Add the rest of the ingredients. Make a somewhat homogeneous mixture. Use hands if necessary. Make cookies with your hands (fast) or press into forms. Eat some of the stuff with your kids as it is. Place the rest in the oven preheated to 160°C (320°F) for something between 20-60 minutes depending on the size of your cookies. Honestly, I am still looking for just the right time.


Hide some of the finished cookies for a handy to-go snack otherwise they will go in a day, perhaps two.
