Almond Flour Banana Berry Muffins


Prep Notes

No refined wheat flour and sugar upsetting your hormonal balance, and damaging your intestines and brain. No bad fats releasing free radicals. Just whole foods. Done in minutes plus baking time. Kids love it. Husband loves it. You might love it too. Trying to lose weight perhaps? Could be the time to ditch the processed white powders! I wouldn’t love it too often though. Bananas still count for sugars. Occasional treat is the key.

Cooking Time

5 minutes plus 30' in the oven

Yields

6 big muffins

Ingredients

2 cups almond flour or almond meal

3 eggs

2 big, very ripe bananas

200-300g of fresh or frozen berries

2-3 tbsp coconut oil (butter, ghee, yogurt, duck fat…)

1/4 tsp salt

Directions

  1. Preheat the oven to 180°C (350°F).
  2. Brake the eggs into a food processor, add bananas, your choice of fat, salt. Fluff it around.
  3. Add the almond flour, give it a swirl again to combine well.
  4. Then stir in your washed berries and spoon everything into 6 muffin cups (I like unbleached paper ones, no greasing or washing, and easy to throw in a bag too).
  5. Bake for about 30 minutes or until a toothpick comes out clean (a bit brown on top and smell nice).
  6. Enjoy warm or cooled with a cuppa.

Feel free to swap the kind of fruit you use.
