Amaranth & Apple Pudding

Option: soak the amaranth in water with salt overnight, then reduce the cooking time a bit.

30 minutes

Yields

3 cups

Ingredients

1 cup amaranth

3 cups water

2 apples

handful of raisins

1/2 tsp salt

3 tbsp coconut oil

2 tsp cinnamon

Directions

  1. Wash amaranth and put in a pot with 3 cups of water and salt (let it soak while cutting your apples or overnight)
  2. Peal and cut apples in cubes and add to the pot, add raisins
  3. Bring to boil and cook on low for about 30 minutes or until thick, watch not to burn.
  4. Stir in coconut oil and cinnamon
  5. Serve hot as a breakfast porridge or a warming dinner.
